Doesn't this just look "Autumn'y?"
This is my daughter, Missy's recipe.
YES...it is a repost....it is that time of the year
You know you saw this recipe somewhere...
so here ya go :
DINNER IN A PUMPKIN
1 med. size pumpkin, topped and cleaned out
1 onion chopped and sautéed w/ground beef1 lb. ground beef, browned and drained
3 Cups Cooked rice (white or brown)
1 can mushrooms or 1 c. fresh mushrooms (optional)
2 can cream of mushroom soup
Salt and pepper to taste (I also add pumpkin pie spice)
Combine ingredients and put in pumpkin.
Put top on pumpkin.
Place pumpkin on cookie sheet in oven preheated to 375 degrees.
Bake for 1 ½ to 2 hours. (you can tell it is done with pumpkin scrapes easily out of the pumpkin)
Serve dinner in pumpkin.
Scrape pumpkin out and serve on top of rice mixture with brown sugar.
Do not open pumpkin while baking or
it will expand and top will not fit on pumpkin again

I've always wanted to try this recipe so "Thanks!" for re-posting it. Also, loved reading what you said about praying. How many times has the Lord answered someones's prayer and you hear about it and realize YOU forgot to even pray! I, too, am trying to pray right when I am asked to. It is a privilege to pray to the One, Jesus Christ, who knows our requests before we even ask! Love you Deb...Susie
This sounded great when you mentioned it this morning! Thanks for sharing.

I have never baked in a pumpkin before! I have served stew out of one though using the pumpkin as a soup tureen!
It sounds so yummy and it looks so appealing to serve - looks like an easy clean up too. I'm going to try this. Thanks for sharing.
I've never seen a recipe quite like this before. I have never tried to cook anything inside a pumpkin. I'm sure it makes the house smell good though. :)
Blessings,
