Dinner in a Pumpkin

Our daughter recently had us over for dinner.
This is what she served
I love how it looks,
The TASTE.......WONDERFUL


DINNER IN A PUMPKIN
1 med. size pumpkin, topped and cleaned out
1 onion chopped and sautéed w/ground beef1 lb. ground beef, browned and drained
3 Cups Cooked rice (white or brown)
1 can mushrooms or 1 c. fresh mushrooms (optional)
2 can cream of mushroom soup
Salt and pepper to taste (I also add pumpkin pie spice)

Combine ingredients and put in pumpkin.
Put top on pumpkin.
Place pumpkin on cookie sheet in oven preheated to 375 degrees.
Bake for 1 ½ to 2 hours. (you can tell it is done with pumpkin scrapes easily out of the pumpkin)
Serve dinner in pumpkin.
Scrape pumpkin out and serve on top of rice mixture with brown sugar.
Do not open pumpkin while baking or
it will expand and top will not fit on pumpkin again

Those pictures turned out great... I love how dark the pumpkin gets when it is cooked! You guys are welcome for dinner any day of the week (Takeout Teriyaki tonite! )

I was surprised how good the pictures turned out with my little camera...it is such a neat looking meal,,,,the salad was great too

That is what I like, besides the taste..the unique look of it...
and the pan underneath you THROW away..not pots to wash other than what you cooked the rice in....

That's by far the most interesting dish I've ever seen. And the first thought that came to my mind when I saw it was from a Peanuts cartoon. Lucy was carving a pumpkin and began to empty the insides, and Linus said, "You killed it!!"

Yum! I had a pumpkin baked meal last month for the first time in my life and it was fabulous! They just filled it full of chili, and just like your recipe. I was amazed at how good the pumpkin made it taste!
